    Technically, the only requirement for Mumbai chai to be of the "cutting" variety is for the tea to be served in a very small glass. Tradition gives us a few other rules of thumb:


    • Cutting chai expected to be extra strong--like an espresso but for milk tea. 
    • The tea is boiled alongside full-fat milk and a generous portion of sugar.
    • Ginger (grated) is highly encouraged. 
    • Cardamom is also encouraged but you can get away without adding it.
