Rolled ice cream has been around for awhile and it's a fun way to mix and create ice cream sundaes.

Rolled ice cream started in Thailand and is sometimes called Stir-Fried Ice Cream. It is a sweet frozen dessert made using cream and sugars plus other added ingredients to add flavor. The liquid mixture is stirred to incorporate air spaces on an ice pan and simultaneously cooled to freezing. As the mixture freezes it is smoothed flat and then strips are rolled up. Once the rolling process is complete, the result is rolls of smooth, semi-solid ice cream or gelato. The rolls are placed in a vertical position in an ice cream cup, topped off with various toppings, and eaten with a spoon.
I've tried rolled ice cream and I can attest that when done correctly it is delicious! And fun!
Rolled, ice cream is sometimes also called teppanyaki ice cream or Thai fried ice cream.
Basically, an iron grill is super-chilled and ice cream is laid out on the surface until it cools, and is scraped up in a roll form. It is called "teppanyaki" because, I guess it is "cooked" on the grill surface, but it's not cooked at all, really.
