How ripe should bananas be for perfect banana bread?

Nearly all banana bread recipes simply call for ripe bananas, but how ripe are we talking? Green bananas won't mash correctly, yellow can be stringy and bland, and overripe can be too boozy. Does the ripeness and sugar content affect the chemistry of baking, or just the flavor?
