Well, a "walking taco" is a Midwest term, another name for a Texas Frito pie, chili, cheese and corn chips, with other ingredients like refried beans, salsa, rice and others that may be added. And it's made in a chip bag, so you can walk and eat. They are also called "taco-in-a-bag," and are popular at outdoor events and venues.

A "walking burrito" isn't quite a thing unless you've encountered some people using that language. But it also is close to meaning a very unsavory slang term, so I wouldn't use the term loosely. Anybody searching online for what the meaning is won't find any use of the term but the slang version. I know what I think you mean, and frankly, ANY burrito can be consumed on the go, so it doesn't need further defining. I'd just go with a walking taco, and leave it at that.
