What Oil is best for frying chicken?
I love making fried chicken, but I always hear conflicting info on what the best oil to fry it in is? I love canola but I know places like chick fl La uses peanut.

My vote is for Vegetable Oil, and not Canola Oil, just all vegetable. It has a high smoke point which makes it good for frying, and it has a good flavour, especially compared to canola oil which can get a rancid taste unless fresh. I went back to vegetable oil awhile ago, had noticed the taste of canola wasn’t quite good enough anymore. All I can say to that is perhaps my tastebuds shifted but didn’t like that taste anymore.
But I have to suggest this - my mom and grandma used to always use Crisco shortening, swore by it. Though not a liquid, it did make for great fried chicken. Nearly forgot about that, and I haven’t used Crisco in decades, but it would be worth a try again, just remembering this. And Crisco is also a vegetable shortening.
