    I’ve only done this with steaks and chicken fillets, and not for the purpose you ask, but it might help produce that taste. Using a very hot pan, particularly a cast iron skillet, will cook the food closer to what you get on an open grill. What makes the grilled food taste good is being cooked on an open and very hot flame. The high heat is the key ingredient. By searing foods on the grill, you contain and enhance the flavor.


    I use mostly a cast iron pan, or a stainless steel pan, heat it up for a few minutes on a medium hot setting, 6-7/10. Get the pan good and hot, and test with drops of water to ensure it is sizzling hot, then add cooking oil to spread, and make sure the cooking oil shimmers in the pan to be certain it’s good and hot, then add the steak or chicken to the pan. I leave that meat alone for at least 3 minutes, or a few minutes until cooked edges come up on the sides. You can get a char on the food by not moving it constantly, but only to turn after a few minutes. This method might work to fill that flavor need for you, and I think would be worth a try.
