Kids and veggies can be quite the pickle-  get it?  Often for children, hating vegetables is a matter of texture- so many veggies get mushy when cooked and mushy foods can be yucky foods Too, heat applied to vegetables turns their sugar content to starch-  which is why raw carrots or tomatoes taste sweeter than cooked.

So, try a few different things without letting Junior know you are trying to get him to eat vegetables-  face it, once a child knows you want him to do something he isn't crazy about doing, fat chance you'll get him to do it.  Law of inverse attraction.

    • Sweet potato fries are vegetables.  Don't say that word, just serve 'em and eat 'em yourself.
    • On that subject, try those veggie chips in the snack aisle.  Again, don't say anything about them (see exception, next) just put them out as a snack
    • Exception:  It's almost mean to use such psychological tricks, but, you get them out and eat a few in front of him, explaining, if he asks, they are YOUR snack- not his.  You don't have to tell him what they are, or that they are healthy- any of that- just they are yours, and he can have his graham cracker.  It won't take long and he will keep bugging you to the point where you will give in and let him have "...one-  you can have one--"  Reverse psychology strikes again..
    • Don't be afraid of Ranch dip-  it makes most any veggie better for at least a bite or three
    • Also don't be afraid of a sprinkle of sugar.  Yeah, yeah, yeah, I know.  sugar!  Horrors!  Wrong- a half teaspoon sprinkled over a thick, juicy ripe sliced tomato will become far more attractive to Sonny than all the Mrs Dash in the world.  Steamed new peas with a teaspoon of sugar and a pat of butter glossing over them are scrumptious!
    • Soup is good food.  Grilled cheese sammich's best friend, a cup of tomato soup, is veggies; cream of potato soup is veggies, and can be parlayed into cream of broccoli and cream of cauliflower.  If all else fails, a juicy salsa can be eaten with Fritos and a spoon for both corn AND all the veggies in the salsa!
    • Lastly, well, you might have to institute a food rule at your house:  The One Bite Rule.  Like it or not, everyone must take one bite of all the foods on the plate.  Everyone.  This means you.  All the foods.  This means even the foods YOU don't like.  One bite.  Never killed anyone.
    • It will take some time, I know, but kids usually learn to like vegetables- some, at least.  If he likes salad, try adding a few raw snap peas and maybe some grated jicama.  Grate cabbage, and stir it into green jello with miniature marshmallows and some crushed pineapple.  And don't forget how to hide veggies in dishes like meatloaf and stuffed pork chops.

Good luck.  Before you know it, he'll be like my pickiest: A sous chef in restaurants....
