Should I incorporate as an LLC or C-Corp?

I'm wondering what the best way is to incorporate my startup. Should I go for an LLC as a sole proprietor?

If I add co-founders, is the S-Corp or C-Corp model the best?

What are some of the pros and cons of each approach? Can I change my LLC to a C-Corp if I start as an LLC, and how difficult is that?
