    The cookbook "Fresh from the Vegetarian Slow Cooker" is great! Yes there are a lot of soups and stews in there, but there are also chilis, beans, pot pies, stuffed vegetables, desserts, and seitan recipes. My favorites are the sloppy lentils and southwest pot pie with cornbread. The stuffed acorn squash is really good too (go easy on the turmeric, though). My absolute favorite vegetarian crock pot recipe is lasagna. Most people wouldn't think to make lasagna in a slow cooker, but if you're not too concerned with presentation, it's the easiest way to make it! There's a recipe for that in the cookbook as well - I either make a classic spinach lasagna or a pesto one with zucchini and red peppers.
