What is the correct way to store bacon grease/drippings for cooking later?
I fry bacon every weekend and save the grease to fry food later in the week. (Waste not want not!) I continually add bacon grease to a dedicated mason jar with a tight lid and keep it in the refrigerator. Is this correct? How long will it last this way? How often should I discard the whole jar and restart?

I am not an expert on this particular. My knowledge is mostly from observation and science.
Bacon grease stored properly will last a minimum of 6 months. Your sealed mason jar is a perfectly acceptable recepticle.
My mother and grandmother have done this for my entire life. I will be 56 this year.
