What is the difference between bread flour and regular all-purpose flour?
I recently started making my own bread in my bread maker. Some recipes call for bread flour, some call for all-purpose, and some call for a mix of both. What is the difference between the two?

Bread flour typically has a higher protein content than all purpose flour. This impacts the texture among other things. Interestingly, whole wheat flour has a higher protein content than white flour, and can be used fairly interchangeably with bread flour.
