Why do no show fees exist?

I understand that it’s rude to not show up for an appointment, but if you’re still paying for the appointment/services, then why do you have to pay the no show fee? Is it just a way for companies to get more money from you?

In no way shape or form are you "still paying for the appointment."  You're paying for a new appointment.  When you book someone's time, and then don't show up for that time, you've cost them potential income because they can't earn during that time.

There is a bit of a double standard on this - if a doctor is an hour late for your appointment, you don't get a refund or compensation for your time - although this IS something you can ask for with other kinds of services.

Basically, yes, if you fail to show up for a scheduled appointment, you are costing the other party money, and no-show fees reflect that.  Every company would rather you showed up for your scheduled appointment.  If you can't give appropriate cancelation notice because of a legitimate emergency, many will waive the no-show fee (once).  But that's a courtesy, not something you should expect.
